Head chef Andreas Schwienbacher and his team put this philosophy into practice every day. The South Tyrolean has Alpine culinary roots at his heart and brings with him a wealth of experience from the best restaurants in the Alpine region. The dishes are deliberately reduced to what the region and the surrounding Alpine area have to offer. The result is food with the greatest pleasure. Our gourmet menus change with the rhythm of the seasons.

In our extensive wine list you will find wines from the Bündner Herrschaft and the wine-growing regions of Switzerland, as well as selected wines from European countries. Sommelière Dagmar Jandlova has put together a varied wine list with great sensitivity and a high level of expertise. She has already been honoured for the second time with silver at the Swiss Wine List Award in the «Fine Cuisine» category.

Purchase a wine of your choice at the Valentin Vinoteca and have it served with your dinner for a flat service charge. You pay a service charge of CHF 45.- for 7.5 dl up to a sales price of CHF 70.- From a sales price of CHF 70.- we charge CHF 55.- per bottle. For a magnum bottle we charge a tap fee of CHF 90.-.

«Paschiun art culinarica alpina» is René Stoye's philosophy, which the GuardaVal kitchen team, led by chef Andreas Schwienbacher, puts into practice every day.
In winter 2013, we began to break new ground in our restaurant in GuardaVal. The house is the epitome of the way the Engadine is built and thus also a symbol of tradition, unspoiltness and living with the forces of the mountain world that surrounds us. The cuisine also reflects the reduction to what nature gives us. The purity of the products, the effort of preparation and the ever-changing scent of vegetables, stews, preserves and sweets is what takes centre stage.
