«Paschiun art culinarica alpina by René Stoye»
Engadine Gourmet Restaurant GuardaVal
The gourmet restaurant in the Engadine boutique hotel GuardaVal offers Engadine gourmet cuisine at the highest level with 15 points Gault Millau. «Paschiun art culinarica alpina», passion for alpine culinary art, is René Stoye's philosophy. Chef Stefan Rohrlack and his team put this philosophy into practice every day. The dishes are deliberately reduced to what the region and the surrounding Alpine area have to offer. The result is food with the greatest pleasure. Our gourmet menus change with the rhythm of the seasons.
Experience an unforgettable culinary evening at GuardaVal. For an aperitif before dinner or a digestif afterwards, our Cheminée Bar and our panorama terrace are the perfect place to start or end a wonderful evening. Enjoy the romance of our restaurant and let us spoil you.

René Stoye's kitchen philosophy
«Paschiun art culinarica alpina»
«Paschiun art culinarica alpina» is René Stoye's philosophy, which the GuardaVal kitchen team, led by chef Stefan Rohrlack, puts into practice every day.
In winter 2013, we began to break new ground in our restaurant in GuardaVal. The house is the epitome of the way the Engadine is built and thus also a symbol of tradition, unspoiltness and living with the forces of the mountain world that surrounds us. The cuisine also reflects the reduction to what nature gives us. The purity of the products, the effort of preparation and the ever-changing scent of vegetables, stews, preserves and sweets is what takes centre stage.
