Kitchen philosophy at the Hotel Belvedere Scuol
«Il dalet pür» - the pure indulgence
Regional with a cosmopolitan view, innovative and sustainable - these are just a few keywords to describe our cuisine at the Hotel Belvedere. «Il dalet pür» loosely translated means «pure indulgence», is reduced to what counts.
The producers are mostly from the valley, if not from further afield to the lowlands, we maintain personal and friendly relationships with most of our suppliers. We appreciate their craftsmanship, their passion for good products and their striving to always get the best out of everything - just as we ourselves always aim to do.
The restaurant exudes the breath of the Grand Hotel, the tables are set in splendid white, the colourful hustle and bustle brings the house to life and makes the meal the convivial highlight of the day. Food is passion and makes time pass - awakens the senses and love ...
I discovered this early on, hospitality and the joy of doing something good for others were laid in my cradle. And so it was quickly clear that I wanted to become a chef. I have no regrets, I have let my love for nature and its wonderful products grow stronger on my journeys to the most beautiful houses in Austria, and I have found a place here where I can give my joy in my vocation and my joy in serving guests enough free space.
The result is a cuisine that carries my heart and reflects my greatest concentration in every dish. On top of that, it is healthy, because nothing does better than good taste, which turns us into children! I don't look for the «latest thing» or the «spectacular», I remain quiet and modest. There is a lot of stewing, preserving, proper cooking. Craftsmanship is very important, the pots are smoking, the meat is roasted and the dough gets the time it needs to be perfect. I am a cook with heart and soul and always want to give my guests the best.
The menu changes daily, my favourite dishes stay longer on the menu. Every season has its highlights, which we present in a special way. With my cuisine «Il dalet pür» I take you back to the core of taste, to the simplicity of the special.
I sincerely wish you much pleasure in pure enjoyment and thank you for being our guest.
Your Peter Ramsbacher
